I was looking along Cupcakes and Cashmere…one of my favorite blogs. She made a Berry Pie and Blogged about it. She posted the most yummy pictures of the process. I all of a sudden got a taste for BlueBerry Pie…and if you know me personally. I have been hooked on blueberries for the past year.
So I decided to tweek the recipe which is an old Joy of Cooking Recipe. Instead of a whole pie I made turnovers. I also only used blueberries this time. I wish i could have used Strawberries, but we will try something with that later.
So here is what I did.
4 cups of blueberries.
3/4 Cup of Sugar.
1/2 Cup of Flour
1 1/2 tablespoon of lemon Juice
1 Package of Pillsbury Pie Crust ( its two pieces the top layer and bottom layer.
1 Baking Sheet covered in Foil for easy Clean up.
1 Egg Beaten ( Egg Wash)
Wash and Clean your Berries. In a small bowl mix flour and sugar and sprinkle over berries. pour your lemon juice in and blend carefully. Preheat your oven to 340 degrees. Unroll your pie crust and cut down the middle and directly across. You should have four pieces with a round edge. Do this again with the other crust, so you should have eight. Take a spoonful of berries and place in the middle of the pie crust cut out. Don’t pack it bring the three corners of the pie crust and pinch. See picture below of final product and it will give you some sort of idea. Make sure it’s tightly closed. If you want poke a few slits in the crust for decoration . Brush gently with Egg Wash and Sprinkle Raw Sugar is you like.
Place your turnovers on the pan and put in the oven. Bake for 40 Minutes or until the crush is golden brown. If you don’t have a cooling rack carefully place the turnover on a new baking pan with foil and allow them to cool.
Sorry in advance for the crappy pictures…I’m saving my pennies just to get a fancy camera for the blog…my regular camera battery died…and i haven’t a clue where the charger is…so i used my camera phone…Not bad for a camera phone though haha.
