I’ve been craving Quesadillas, but I didn’t want crazy greasy mess. So i thought what would taste good. I decided to try Spinach and Mushroom…then I thought what about Onions…and then what kind of cheese? So i came up with Caramelize Onions, and Goat Cheese. I also added Tomato.
This shall be called Goat Cheese and Veggie Quesadilla.
1 Onion Sliced Thin
2 Cups Spinach If Frozen thaw, and sqeeze dry.
I tomato Sliced Thin
3 Handfuls of Mushrooms
4 oz of soft Goat Cheese (or crumbles)
4 Medium Sized Tortillas
1 Teaspoon of Sugar
1/4 Teaspoon of Salt.
Olive Oil
1. Heat a Skillet pour in a tablespoon of Extra Virgin Olive Oil in the pan. Put the onions in with the salt, and sugar. Stirring occasionally let the onions brown. Set Aside
2. Next Brown Mushrooms with a little salt…just a little. Set aside.
3. Cook Spinach if fresh until it’s wilted, and if its frozen still cook until it’s hot enough. Remove and set aside.
In the same skillet wipe with Extra Virgin Olive Oil and out Tortilla inside. Put some mushrooms, onions, tomato, and spinach in one half…put some cheese on it, and fold. Cook on one side, then flip to cook to the other, repeat for the rest.
Use a Pizza Cutter to cut Quesadilla in four.
