I swear I’ll be posting more than food soon. I’m getting all the bad stuff out of my system before I start Cross fit on Tuesday! Well not all of it, because I will indulge and blog yummy things, I’ll just figure out a way to give it away.  This was my second time making this cake, I wanted to be sure the first time.  I got the recipe from Smitten Kitchen who halved the original recipe since it was a ton. This cake is super moist and the secret ingredient isn’t milk, or butter milk but Chocolate Stout Beer. Any stout can replace it such as Guinness, but I fell upon this while in Whole Foods.

I was talking to a friend the other day about this cake. They seemed a little intimidated by the thought of using a double boiler. I’m here to state that a double boiler doesn’t have to be fancy or complicated. I simply took a sauce pan, filled it with an inch of water and place a bowl over top. I got that bowl from Ikea for two bucks. I love this bowl and it’s bigger momma bowl I use both of them on a regular basis.

This is a fairly easy cake to make. It’s moist and delicious and the glaze only has three things ingredients. Once it’s completely cooled the icing hardens a bit….firms for a lack of better words. it taste great reheated with a glass of milk.

1 cup stout (such as Guinness)
1 cup (2 sticks) unsalted butter
3/4 cup unsweetened cocoa powder (preferably Dutch-process)
2 cups all purpose flour
2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 large eggs
2/3 cup sour cream
6 ounces good semisweet chocolate chips
6 tablespoons heavy cream
3/4 teaspoon instant coffee granules

Cake prep:
Preheat oven to 350°F. Butter or spray a bundt pan well; make sure you get in all of the nooks and crannies.  Bring 1 cup stout and 1 cup butter to simmer in heavy large saucepan over medium heat. Add cocoa powder and whisk until mixture is smooth. Cool slightly.

Whisk flour, sugar, baking soda, and 3/4 teaspoon salt in large bowl to blend. Using electric mixer, beat eggs and sour cream in another large bowl to blend. Add stout-chocolate mixture to egg mixture and beat just to combine. Add flour mixture and beat briefly on slow speed. Using rubber spatula, fold batter until completely combined. Pour batter into prepared pan. Bake cake until tester inserted into center comes out clean, about 35 minutes. Transfer cake to rack; cool completely in the pan, then turn cake out onto rack for drizzling ganache.*

Ganache:
For the ganache, melt the chocolate, heavy cream, and coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Drizzle over the top of cooled cake.

Cool the cake completely in the pan before releasing it or you’ll have pieces missing and stuck in your pan.

I’ve been in better moods lately. I had another doctors visit …plehhhh. We are making some lead way on getting me healthy again. I was told to start the DASH diet, which I have to research some more tonight. I’ve been trying to come up with simple and non-complicated recipes that don’t involve me using extra salt. I found this fun recipe (here). It only took me about twenty minutes to make these! These pizzas came out great, and my mom (test tester) ate it all up. We are lovers of thin crust pizzas and since I’m still having touble making crust especially thin crust naan bread was a perfect fit.   I’m sure you can use your own toppings, but I wanted to stick to a margarita type of pizza and I had been craving pesto for sometime. I settled for store brought, and found the Naan bread in the bread section of Harris Teeter and it was lightly dusted with garlic powder.

In other news, we have a crazy and ” I can’t make up my mind” hurricane coming our way. Irene, doesn’t that sound like an angry woman? My whole family is in the house together this weekend just in case we all want to drown together while holding hands! :-) this should be interesting.

These churros were made yesterday with the Spinach Carbonara! The first batch took a little while. I thought the oil was hot, it wasn’t lol. They sank right to the bottom, and didn’t float for awhile! Anyway once the oil was super hot, we were in action! They came out great! I made a Chocolate Sauce from the Heath Chocolate Chips. These are sinfully delicious!

The life of an unemployed( but seeking) blogger. I’ve been watching the cooking channel, and food network a lot in between hitting the gym, and pilates as much as possible. I discovered a show called 5 ingredient fix. I’m in love with this show, most of the recipes are so easy and not intimidating at all. The episode I managed to record was called Diet Busters. It’s when you are eating well, or you do eat well and you have either a free day, or whatever. The host Claire says to go all out if you’re going to ruin it ! Well the three things she made look so yummy that I went to the market and brought the remaining things I needed.

There where three things she made. Mudslide Milkshakes, and adult spin on a childhood favorite, Spinach Carbonara, and Spanish Churros dipped in Chocolate. Everybody in the house loved it, especially the Carbonara. I haven’t had Carbonara since I went to Rome a few months ago, and since then I’ve held off from eating too much pasta since I feel like I’ve had the real thing. I’ll post the Churros tomorrow! This says its a serving of four, more like 8 to 10. I mean it’s all good to have a free day, but I just got back from Body Pump and I can’t totally ruin all that work I did. However I did eat a veggie platter for breakfast, some eggwhites…so I had some free calories to mess around with. I’m not going to bother to put this in my weight watchers calculator, ignorance is bliss in this case.

I promise there will be some more fashion post coming soon. I’m in the process of changing everything from winter, to summer. I found some great pieces that I can’t wait to wear this summer. I’m going to take some pictures of them later on. Also I am posting some new things to my online store! I can’t wait for you to see them!. I was sitting in the kitchen after a long week on interviews and I had a taste for the Tacos I made I made a couple weeks ago. I didn’t have everything, so I decided to try and fuse together something that had the flavors of that taco. So I came up with this, and I call it a taco Burger. I’m sure you would dress it differently if you wanted to.

12 oz of Ground Beef

1/2 cup of Cilantro

1/2 Cup of Finely Chopped Onions

1/2 Jalapeno Pepper Finely Chopped

4 Burger Buns

1 cup of Black Re-friend beans

1 Avocado

4 Slices of Cheddar Cheese

 

Mix hamburger, with Jalapeno, Cilantro, and Onions. Mix well and shape 4 patties. Heat Griddle pan, and cook hamburger to your liking. Heat Black Beans with a few drops of water in a small saucepan. Toast Burger Buns, and place garnishment on the bottom piece of bread. place Burger and cheese on the garnishment such as lettuce or tomato.  Place a tablespoon of Black Beans on top, with a few slithers of Avocado.

Today I woke up and finally sent out the winners prizes! Remind me never to do international included on the next contest! Shipping was crazy! Anyway I went next door to the grocery store in search of ice cream bars. I would them, and next to those were white castle burgers. I remember having them twice when I went to New York as a kid. Well then I flipped the box over and started seeing words that I couldn’t pronounce. I decided that I would get the things to make my own burgers. They weren’t white castle, but they sure were yummy! I topped them blue cheese, caramelized onions and mushrooms. I liked it better without the mushrooms. I really wish I had some toasted Brioch bread for these but I had to settle for regular store brought hamburger buns.

Since my birthday I’ve been trying my hardest to stay on my diet, and working out. Today I went to Thrive Pilates in Arlington VA. I took the reformer mixed level class. I loved it! Basically you are on a machine circa total gym like. You start off doing workouts and using your own weight to work out. It was super fun, the instructor Roxanne was amazing and very welcoming. After class I was so tempted to go and eat, and of course the workout would have been pointless.  I came home and made a quick meal using this (recipe) that I found. Crispy Black Bean Tacos can be made with things lying around the kitchen. A can of black beans, Corn tortillas , and cumin. The recipe explains it all. It literally only took about 10 minutes to make, and wow what a difference cumin makes in black beans!  Bare with me with the photos this is my first time really shooting in manual.

I’m not a vegetarian but I believe this counts as a vegetarian meal. It was really filling, and really good with Hot Sauce!

Happy belated Mothers day to those who fit the shoe! I got up yesterday to spend time with my mother and aunt two strong women that raised me. I made my mothers favorite french toast, with a spin to it I found the (recipe) here. I made it with Cheesy eggs still using that perfection of an egg (recipe).  My ladies loved it. I threw in a few pictures of us eating and having some fun after our movie. I hope you all enjoyed your time with your families yesterday.

I signed up for Weight Watchers on my birthday, and I’ve been drowning in new recipes. I love that you pretty much can eat what you want with moderation. I decided to make a super easy (recipe) of Oatmeal cookies. I tweaked it a little with Chocolate Chips and Dried Cranberries.  They came out great. I provided a link but it looks like you would have to be a member of weight watchers in order to access it and for copyright laws I don’t think I can copy and paste it. If you want the recipe I can email it to you just let me know. Each cookie is worth 2 points.

Last night was so fun. I strapped on my new Prada shoes, and dress and went out with my good friends to celebrate my 25th birthday! I had so much fun, I couldn’t believe it!! Anyway…two bottles of Moet later I twisted my ankle and couldn’t feel my feet. I lasted longer then I thought I would in the shoes! Anyway the next day I woke up in need of Coconut water and food. I was blessed enough to have learned how to make a little something out of nothing when it comes to food. I decided to make a breakfast burrito. I know eggs should be simple enough but I saw (this) perfect way to make eggs.  I cooked a couple of sausage links, a bell pepper blend and topped it with the things I love in a burrito.

Don’t forget to warm your tortilla for about 10 seconds!

Of course you can put whatever you like on there, I opted for Hot Sauce and Spicy Salsa!

Quick and easy Breakfast!
