There is something about Pancakes or Waffles served with butter and syrup that brings me back to childhood. You know like that feeling you get when you eat a bowl of cereal that you haven’t had in years?….no?….Eh. But seriously If I could choose any breakfast and magically eat it everyday without gaining one butter laden pound it would be pancakes!  I wanted to try adding my next favorite food Bacon in there!  So there! You’ve been served a yummy plate of Sweet Waffles with a hint of BACOOOON!

I lied it’s not a hint, it’s a whole lot of Bacon -_-

These waffles are seriously light and fluffy the recipe is from here. I added a few extra things like a couple Shakes of Cinnamon, Crispy Bacon, and a Touch of Cocoa Powder. I wanted something sweet and savory. In a nutshell here is the easy recipe, please take note that the recipe that I linked is a huge batch of waffles, I halved it, and it made 7 Belgium style waffles. We all ate two with one waffle causality since I forgot to spray the waffle iron once.

Ingredients

1 1/3 cups flour

4 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons sugar

2 eggs , separated

1/2 cup butter , melted

1 3/4 cups milk

Optional but nessecary (in my opinion)

4 Strips of crispy Bacon (chopped finely)

1/4 teaspoon cinnamon

1 1/2 teaspoon cocoa Powder

Directions

Turn on your Oven Broiler, and place Bacon inside until Crisp and Done by not burnt.

In a large mixing bowl, whisk together all dry ingredients, including

Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.

Beat whites until moderately stiff; set aside.

Add milk, melted butter and bacon to dry ingredient mixture and blend.

If the mixture is soupy sprinkle in flour in small amounts at a time but remember the batter doesn’t need to be thick, it’s supposed to be lightly.

Fold stiff egg whites into mixture. (don’t over fold)

Ladle mixture into hot waffle iron and cook.

I don’t recommend it, it made the waffle too salty, and I ended up plucking them off.

Regular syrup will do the trick, I tried it with butter Pecan Syrup and it wasn’t that good either.

It’s safe to say that I’ve become very anal about taking pictures with natural lighting. It’s even safer to say that I’ll probably only do food post on the weekend so I can take advantage of that until I learn a little more about artificial lighting.

Chicken you’ve been SERVEDDDD! I found this recipe on A Cozy Kitchen.  My mom loved it, little sis has yet to try it. I loved the aioli sauce because typically I’d put plain blue cheese on it and cause a mess. According to Adrianna (who I found out isn’t a fan of  Bloggers leave their Blog Tag in a comment, her approach is kinda entertaining) this is a easy recipe which is true if you follow hers through and through. But if you’re like me who likes to make shit really complicated…then it’s still easy but involves the extra step of frying the chicken breast instead of using Tysons Chicken. I don’t like the taste of Tysons or the nutritional value situation they have going on. Not to say that Frying Chicken is any better but at least I know there aren’t any preservatives of fillers and I can control the salt in there.

O-K-A-Y now i’m rambling.

So anyway my recipe for the Chicken is this. Fry it the way you like it fried, or you can do this

2 Cups of Flour

1/2 Teasoon of Kosher Salt

1/4 Teaspoon of Season All

1/2 Teaspoon Garlic Powder

1/2Teaspoon Onion Powder

1/2 Tablespoon Paprika

1/2 Tablespoon Black Pepper

4 Chicken Breast

Your favorite frying oil

Bottle of your favorite Hot Wing Sauce.

Place two brown lunch bags in one another. Throw all dry ingredients in the brown lunch bag and give it a shake.

Cut the chicken breast In half (Cross Wise) You should have the top end of the chicken the meaty breast area and the lower portion. Take a kitchen mallot and tenderize the chicken pieces. You should have eight pieces of chicken. Heat your Oil in a frying pan. Place one or two chicken pieces in the brown bag full of flour and shake. Repeat until you have three pieces. Fry your Chicken until it’s golden brown and done. repeat for the rest. Place the chicken pieces on a set of towels until the grease is soaked up. Toss chicken pieces in Buffalo Wing Sauce and Coat well. Set them aside.

Now that that’s covered. If you don’t want to fry the chicken refer back to A Cozy Kitchen for the recipe.

The Rest of the Recipe is PRETTY Simple after this.


1 cup of bleu cheese, crumbled
1 1/2 cup of mayonnaise
Salt and pepper to taste

Hamburger Buns (good quality…or not it’s your life)
Romaine Lettuce
Tomato Slices

To make the Bleu Cheese Aioli mix the Blue Cheese, Mayo and Salt and Pepper and set aside. Place Aioli on the bottom bun, Please Chicken on top, top with Lettuce and Tomato Slice.

Garlic & Herb Oven Fries

2 White Potatoes

4 Garlic Cloves

1 1/2 tablespoon Herb De Provence

1/4 or more of Olive oil

Preheat over to 425.

Wash potatoes thoroughly and cut into wedges. Using a food processor blend Garlic, Herb De Provence, and Olive Oil until smooth.  Coat potatoes with Olive Oil mixture and lay across a cooking sheet and sprinkle with salt and pepper. Make sure you line the sheet with foil and a light coating of cooking spray. Cook until Golden Brown, alternatively shaking the pan to insure even browning.

Seems that quality buns are really thick, I would recommend warming it first.

I’ve been in better moods lately. I had another doctors visit …plehhhh. We are making some lead way on getting me healthy again. I was told to start the DASH diet, which I have to research some more tonight. I’ve been trying to come up with simple and non-complicated recipes that don’t involve me using extra salt. I found this fun recipe (here). It only took me about twenty minutes to make these! These pizzas came out great, and my mom (test tester) ate it all up. We are lovers of thin crust pizzas and since I’m still having touble making crust especially thin crust naan bread was a perfect fit.   I’m sure you can use your own toppings, but I wanted to stick to a margarita type of pizza and I had been craving pesto for sometime. I settled for store brought, and found the Naan bread in the bread section of Harris Teeter and it was lightly dusted with garlic powder.

In other news, we have a crazy and ” I can’t make up my mind” hurricane coming our way. Irene, doesn’t that sound like an angry woman? My whole family is in the house together this weekend just in case we all want to drown together while holding hands! :-) this should be interesting.

The life of an unemployed( but seeking) blogger. I’ve been watching the cooking channel, and food network a lot in between hitting the gym, and pilates as much as possible. I discovered a show called 5 ingredient fix. I’m in love with this show, most of the recipes are so easy and not intimidating at all. The episode I managed to record was called Diet Busters. It’s when you are eating well, or you do eat well and you have either a free day, or whatever. The host Claire says to go all out if you’re going to ruin it ! Well the three things she made look so yummy that I went to the market and brought the remaining things I needed.

There where three things she made. Mudslide Milkshakes, and adult spin on a childhood favorite, Spinach Carbonara, and Spanish Churros dipped in Chocolate. Everybody in the house loved it, especially the Carbonara. I haven’t had Carbonara since I went to Rome a few months ago, and since then I’ve held off from eating too much pasta since I feel like I’ve had the real thing. I’ll post the Churros tomorrow! This says its a serving of four, more like 8 to 10. I mean it’s all good to have a free day, but I just got back from Body Pump and I can’t totally ruin all that work I did. However I did eat a veggie platter for breakfast, some eggwhites…so I had some free calories to mess around with. I’m not going to bother to put this in my weight watchers calculator, ignorance is bliss in this case.

I promise there will be some more fashion post coming soon. I’m in the process of changing everything from winter, to summer. I found some great pieces that I can’t wait to wear this summer. I’m going to take some pictures of them later on. Also I am posting some new things to my online store! I can’t wait for you to see them!. I was sitting in the kitchen after a long week on interviews and I had a taste for the Tacos I made I made a couple weeks ago. I didn’t have everything, so I decided to try and fuse together something that had the flavors of that taco. So I came up with this, and I call it a taco Burger. I’m sure you would dress it differently if you wanted to.

12 oz of Ground Beef

1/2 cup of Cilantro

1/2 Cup of Finely Chopped Onions

1/2 Jalapeno Pepper Finely Chopped

4 Burger Buns

1 cup of Black Re-friend beans

1 Avocado

4 Slices of Cheddar Cheese

 

Mix hamburger, with Jalapeno, Cilantro, and Onions. Mix well and shape 4 patties. Heat Griddle pan, and cook hamburger to your liking. Heat Black Beans with a few drops of water in a small saucepan. Toast Burger Buns, and place garnishment on the bottom piece of bread. place Burger and cheese on the garnishment such as lettuce or tomato.  Place a tablespoon of Black Beans on top, with a few slithers of Avocado.

Well not really with Nigella, more live her cookbook. As some of you know I lost my job, so I’m in school, and I have a ton of free time on my hands! So of course I’m putting things together to relaunch my blog, and putting together new ideas for the blog. Any suggestions of foods you would like to see made? I’m also working on outfit posts, which I’m still a little weary off. We shall see though. Anyway. I purchased my second Nigella Lawson cookbook (pre-layoff) and there are a ton of things in here. I decided to make Chicken and Coconut Rice. The chicken was supposed to be paired with Greek Herb Sauce…but I’m working with a family who is a bit finicky.  I opted out of making the sauce, and made rice, with a side of Honey Roasted Carrots from the Eat this Not That Cookbook, which i LOVE!

Roasted Chicken Adapted from Nigella Lawson “Nigella Kitchen”

Chicken with Greek Herb Sauce
12 chicken thighs skinless, or boneless is fine
juice of 1 lemon
1/4 Cup  tbsp olive oil
salt and pepper, to taste

 

Preheat the oven to 400 Degrees place Thighs skin side up if you have skin, pour olive oil, and lemon juice over the chicken pieces, season with salt and pepper. Roast for 45 or until juices run clear.

 

I was kinda weary of Coconut Rice, but only because I never thought I could get it right, I actually think this came out great, and I omitted the Mustard Seeds, because I couldn’t find them in the market.  Recipe is (here) on Nigellas Website

It was important to get Garlic Infused Oil

This was a pretty easy meal in my opinion. The Chicken was juicy, the rice was flavorful, and although I actually forgot to peel the carrots (shh) my aunt said they were still yummy.

This Sunday has been a day full of cooking. I made food for the week. I started off  Italian Subs, and followed up with  Spinach and Mushroom Lasagna. Oh wait….and chewy fudge brownies.  While I’m watching what I eat I am also making a ton of foods from scratch and altering the recipes as I go along. I found my Lasagna recipe (here). I found it on whole foods website, but I used Fat Free Ricotta and Low Fat Cheeses. I used extra Spinach, and added two layers of mushrooms.It came out great, and it should last me during the week.

Greetings the Mountain called my boob in this picture haha.

Can’t wait to have this for lunch tomorrow.

 

NOW the LONG AWAITED BROWNIES. This was easy to make. I had never used the Boiler Method for melting Chocolate. I wish I had done this with the Peanut Butter Squares I did last week.

What an Amazing week. I received some orders finally. A very Nice Lion’s Head Belt from Golden Pony. I finally got more Shatter Nail Polish for the Giveaway that i’m preparing for. Finally purchased my tickets to Rome for Spring Break. I’m spending about 5 days near Vatican City.  I all of sudden had Cravings for Italian food (mind games).

I decided to make Dinner for the whole house. I was browsing around for Dinner Ideas and found an Italian meatball Sub recipe on A Cozy Kitchen.  It came out so good, and I’m going to make this more often when making my pasta dishes.

 

Parsley, Bread Crumbs, Cheese, and Egg Mixture

This might have been the best meatball I’ve even had! You can’t see the cheese oozing out when you break it apart.

 

I topped it with some chunks of fresh Mozzarella cheese.

 

The Family Loved it! I paired with a Salad that my Aunt makes…Its topped with Strawberries, walnuts, and whatever else she puts on it.
